How Long Do Dates Last? Which Source to Trust for Which Purpose

Unopened packaged dates keep roughly one to three months in a pantry at 70°F, six to twelve months in a refrigerator at 40°F, and more than a year in a freezer at 0°F. Moisture sets the spread. The WFLO Commodity Storage Manual gives semi-soft dates at 20–30% moisture one month at 70°F, eight months at 40°F and over a year at 0°F, while soft dates above 30% moisture get six months even at 32°F. UC Davis puts fully ripe dates at 6–12 months at 32°F depending on cultivar. The date printed on the bag is a quality date set by the packer, and USDA's Food Safety and Inspection Service states that except for infant formula, such dates are not an indicator of safety and are not required by federal law.

What the best-by date on the package actually tells you

It tells you what one packer's shelf-life study concluded about one pack format. Nothing more. The FSIS fact sheet is unusually direct about this: manufacturers apply dates to help people judge quality, and outside infant formula there is no federal requirement to print one at all. USDA estimates 30% of the food supply is lost or wasted at retail and consumer levels, and label confusion is one of the causes.

California decided the wording itself was the problem. Under AB 660, now written into Food and Agricultural Code section 82001, any food item manufactured on or after July 1, 2026 that carries a date label must use one of four phrases: "BEST if Used by" or "BEST if Used or Frozen by" for quality, "USE by" or "USE by or Freeze by" for safety. Consumer-facing "sell by" is gone, and eggs, infant formula and malt beverages are exempt. The provision I have quoted most often to volunteers is subdivision (d)(1), which says the section "does not prohibit, and shall not be construed to discourage, the sale, donation, or use of food after the food's quality date has passed."

For my first stretch running the receiving door I treated that printed date as a hard line and pulled anything past it, which was wrong in an expensive direction. I stopped around 2021, after reading the FSIS sheet properly. The number describes sealed fruit under conditions the packer never discloses, and says nothing about a pack left open on a 78°F counter.

The strongest argument against my position comes from the people who make the fruit, and I take it seriously. The packer knows things I never will: the cure moisture they targeted, the barrier properties of their film, and the accelerated trials that produced the number. I cannot reproduce any of that from a receiving dock. All true, and it is why I still treat the printed date as real information. What it cannot know is your kitchen. It describes sealed fruit under the packer's assumptions, which makes it a good floor for quality and a poor ceiling for safety.

How long dates last at each storage temperature

The most useful number set I have found is the WFLO Commodity Storage Manual entry for dates, revised in 2008 and reviewed by Louis Aung of USDA's Agricultural Research Service and Elhadi Yahia of the Universidad Autónoma de Querétaro. It gives semi-soft dates at 20–30% moisture the following: one month at 70°F, three months at 60°F, eight months at 40°F, one year at 32°F, and over a year at 0°F, all at relative humidity of 75% or less. Soft dates above 30% moisture drop to six months at 32°F.

Two of those temperatures are not available to you. A home refrigerator should run at 40°F or below and a home freezer at 0°F or below, per FDA's guidance on appliance thermometers, so the 32°F row is a commercial figure and the 60°F row belongs to a cellar most people do not have. That leaves 70°F, 40°F and 0°F to describe an American kitchen, which is why the answer at the top uses those three.

UC Davis's Postharvest Research and Extension Center, in the date fact sheet written by Adel Kader, gives an optimum of 0°C (32°F) for 6–12 months, notes that semi-soft cultivars such as Deglet Noor and Halawy outlast soft ones such as Medjool and Barhi, and puts optimum relative humidity at 70–75%. It also supplies a number nobody quotes and everybody should: dates freeze at −15.7°C (3.7°F). A freezer at 0°F genuinely freezes them. A refrigerator only chills them.

The third row's caveat belongs in the open: neither document has moved in a long time. I still lean on both over most of what turns up in a search, because the physics of sugar, water and temperature has not changed and because both name their reviewers.

Water activity is the number that actually sets the clock

Total moisture is the number people quote. Water activity is the number that decides what grows. It measures free water rather than bound water, on a scale where pure water is 1.0, and dates carry so much sugar that they bind most of their own. UC Davis puts total sugars at about 50% on a fresh weight basis.

Noutfia and Ropelewska, publishing in Agriculture in 2023, measured Mejhoul (Medjool) fruit at the fully ripe tamr stage and reported water content of 28.0%, water activity of 0.652, and total soluble solids of 62.1%. Dry cultivars sit lower still, at 20% moisture or less and water activity under 0.65.

Set that against the thresholds. FDA's Food Code excludes any food with a water activity of 0.85 or less from the definition of a food requiring time and temperature control for safety, which puts dates well outside the range where pathogenic bacteria are the concern. Most molds stop below about 0.70. Below 0.60, essentially nothing grows, though the most xerophilic food spoilage fungus known, Xeromyces bisporus, has been recovered from dried fruit and germinates at around 0.61.

A Medjool at 0.652 is therefore sitting between the mold floor and the no-growth floor. It is stable, and it has almost no margin. UC Davis reports that yeasty fermentation sours dates above 25% moisture, that drying to 20% or lower greatly reduces molds and yeasts, and that the dominant spoilage organisms are sugar-tolerant yeasts of the genus Zygosaccharomyces rather than bacteria. The WFLO manual adds that dates readily absorb moisture from room air, which is why it caps storage humidity at 75%.

A pack of Medjools does not spoil because time passed. It spoils because it picked up water.

Medjool versus Deglet Noor versus pitted dates

This comparison decides which row of the storage table applies to you, and most people get it backwards by assuming the fancier date keeps longer.

The sugar column explains the last row. WFLO records that sugar spotting is more common in soft cultivars than semi-soft ones and concentrates in fruit between 22% and 33% moisture. UC Davis narrows it further: sugar spotting occurs mainly in cultivars where glucose and fructose are the main sugars. Medjool is an invert sugar variety. Deglet Noor is a cane sugar variety. That is why the expensive Medjools develop white bloom and the cheap chopped dates in the baking aisle usually do not.

This one took me longest to see. Natural Delights, which packs Medjools, tells buyers six months in the fridge, while WFLO gives semi-soft dates eight months at 40°F and soft dates only six months at the colder 32°F. Those look contradictory until you check the measured moisture. At 28%, retail-cured Medjools land inside WFLO's semi-soft band rather than its soft band. The packer's six months and the manual's eight are describing compatible fruit, conservatively and less so.

I cannot give you a measured water activity for pitted packs. Nobody I could find has published one, and pitting breaks the skin, which is the fruit's own moisture barrier. Pitted packs are normally built from drier cultivars because the stone releases cleanly, and US grade standards treat pitted and unpitted fruit as separate categories with different minimum weights. Past that I am reasoning from moisture class rather than from a number.

How to store dates at home

  1. Read the variety off the pack and treat the name as a moisture proxy. Medjool means soft and short-lived. Deglet Noor, pitted or chopped means drier and more forgiving.
  2. Decide your horizon before your shelf. Anything you will finish inside a month can sit sealed in the pantry. Anything longer goes cold.
  3. Move opened packs into glass or hard plastic. Stored-product insects chew through thin film, and a rolled-down bag lets in room air.
  4. Refrigerate at 40°F or below, or freeze at 0°F or below. Verify with an appliance thermometer rather than the dial, which is FDA's advice for this reason.
  5. Label the container with the date you opened it. The printed best-by describes sealed fruit and stops meaning anything once you break the seal.
  6. Keep them away from onions, garlic and potatoes. UC Davis notes that fully ripe dates readily absorb the aroma of neighboring commodities.
  7. Thaw at room temperature in the sealed container, so condensation forms on the outside rather than on the fruit.

I changed my standing advice here about three years ago. Everything used to go to the cooler by default. Now anything without a near-term destination goes to the freezer, and the cooler holds what is in rotation. Kader's answer to a reader with twelve pounds of Medjools is the reason: freezer storage at about −18°C "will maintain their quality much better than storing them in the refrigerator (about 5°C = 41°F)," and because of their sugar content, freezing does not damage date texture the way it damages other fruit.

That same answer says the freezer "will also kill any insect eggs that might be on the dates." I cannot vouch for that part. Rutgers Cooperative Extension recommends three or four days at 0°F to kill larvae and adults and says nothing about eggs, and other pest references argue the egg stage needs considerably longer. I have no way to settle it at a receiving door. What I can vouch for is the outcome: no pack has come back infested after a month in our chest freezer, and I have watched infestations walk out of a pantry more times than I can count.

How to tell a spoiled date from a normal one

Start with the white coating, because it accounts for most of the fruit that gets thrown away by mistake. Sugar spotting is crystallization of sugars below the skin and in the flesh. UC Davis says it alters texture and appearance without affecting taste. WFLO calls it harmless and adds the detail that matters: it can be reversed by gentle heating, and it may return later if conditions suit it again.

I learned that after condemning a fifteen-pound case of donated Medjools that I read as mold. That case would have fed people. The crystals were dry and pale and sat under the skin; warming one date for a few seconds would have dissolved them and saved the box. Nobody had trained me on it, and I had not gone looking.

Mold differs in ways you can name. It is fuzzy rather than powdery, sits on the surface rather than under the skin, carries color, and usually starts at a split or a bruise. UC Davis identifies Aspergillus, Alternaria and Penicillium as the fungi that grow on high-moisture dates, especially fruit harvested after rain. Warmth dissolves sugar crystals and does nothing to fuzz.

Smell catches fermentation, which is the failure mode dates reach before mold. Sugar-tolerant Zygosaccharomyces yeasts produce alcohol, and Acetobacter bacteria convert that alcohol into acetic acid, so a fermented date smells first of alcohol and later of vinegar. Souring shows up above 25% moisture. If a pack smells like wine, the fruit went wet somewhere.

Holes, webbing and grit at the bottom of the bag mean stored-product insects, and those go out. Everything else is a judgment about moisture. Dry, dark, crystallized dates are old and fine. Sticky, weeping, sour dates picked up water and are not.
